Cauliflower Sushi Rolls - Low Carb
Makes two rolls.
Ingredients:
2 organic sushi nori sheets
1/2 avocado
1/2 cucumber
½ lb piece of wild Alaskan salmon
Rice
1 tsp erythritol "sugar" or 2 tsp yacon syrup
1 cup cauliflower, grated into rice like pieces
2 tbsp organic virgin coconut oil (for pan)
1 tsp gluten free tamari soy sauce or soy free coconut aminos
⅓ cup organic sesame seeds
2 tbsp rice vinegar
Instructions:
Chop cauliflower by hand or blend in a food processor until it is chopped into small rice-like pieces. Add the rice vinegar, soy sauce, and erythritol. Cook on stove stop around 10 minutes, cauliflower should release moisture and soften. Add sesame seeds and let cauliflower cool in the fridge while prepping remaining ingredients.
Cut cucumber, avocado, and salmon into strips
Lay out nori on non stick silicone mats or parchment with bamboo
Lay cauliflower mixture on top or nori
Place ingredients on one end
Roll sushi and slice roll. Serve up with some wasabi and gluten free soy sauce!
Tip: To make it spicy mix with mayonnaise, sriracha, and salt, to taste.
